Steam-Baked Campfire Muffins - Backpacking Recipe

Not sure what to make at camp for breakfast? Impress your friends with this steam-baked muffin on your next camping trip! Plus, it's healthy and all VEGAN! Yes, weโ€™re serious. Camp baking is easy with these campfire muffins!

Total Time: 20 minutes

Ingredients

ยผ cup unbleached all purpose flour
2 tablespoons whole wheat flour
1 tablespoon whole oats
1 tablespoon cocoa powder
3 ยฝ teaspoons cane sugar
ยผ teaspoon ground cinnamon
ยพ teaspoon baking powder
Salt, dash
ยผ cup raisins
ยผ chopped walnuts
2 tablespoons chocolate chips
1 teaspoon coconut flakes
ยผ cup water
Play around with this recipe by replacing the raisins with different combinations of chopped dried fruit, such as dried apples, cranberries, figs, pineapple, or mangoes. Cocoa powder is optional but will make it a double chocolate muffin! ๐Ÿซ๐Ÿ˜ฎ

Directions

1. Add a rack or some rocks to bottom of cooking pot and pour in an inch or two of water.
2. In a silicone bowl, mix together all ingredients. Add a tiny bit of the water at the bottom first to keep it from being dry.
3. Place bowl on top of rack or rocks and bring water to a full boil. Cover with lid. The steam will cook this muffin.
4. Bake until the center is baked and fluffy, approximately 15 minutes. Continue to check on it for readiness and also to make sure there's still water at bottom of the pot. You may need to add a little more water to the pot to make sure it continues to steam bake, since the water will evaporate.
5. Eat direct in the silicone bowl, or pop it out of the silicone bowl. Enjoy!

      Thanks so much for the kind words Carolyn! ๐Ÿ˜Š You know it’s funny that we’ve only tried making this in camp with steam-baking and never actually in the oven. We’d probably bet that 350 degrees F would work well. If you try it, you’ll have to let us know how it goes!
