Vegan Tofu Scramble Recipe

If youโ€™ve never had a tofu scramble, youโ€™ve been missing out! This awesome protein-packed vegan tofu scramble recipe has been a game changer when we want something more from breakfast on the weekends. Kick scrambled eggs to the curb and try this recipe!

Ingredients

1 tablespoon coconut oil
1 onion, finely chopped or sliced
3 celery ribs, chopped
3 garlic cloves, minced
1 tablespoon lemon or lime juice
3/4 cup water or liquid from tofu
1 package extra firm tofu

(optional) 1/4 cup nutritional yeast
(optional) 1 carrot or sweet potato, grated

Tofu Scramble Seasoning


1/2 tsp cumin seed
1/4 tsp thyme
1 tsp paprika
1/2 tsp turmeric
1 tsp sea salt
1/4 tsp black pepper
Change up the spicing a bit for a Southwest, Mexican, or even a curry vegan scrambled. The great thing is this recipe is so versatile and open to variations. Add in interesting ingredients like chopped apples or shredded veggies. Itโ€™s all good.

Directions

1. Heat pan with oil or water and sautรฉ all veggies until translucent, about 10 minutes.
2. Add tofu scramble seasoning and stir until well mixed.
3. Add water or juice from tofu if it starts to stick.
4. Add block of tofu and break up while mixing and cooking about 5 minutes. Enjoy!
