Vegan Chickpea Mock Tuna Salad Recipe

This meal is a complete vegan tuna salad using only garbanzo beans and a handful of other ingredients. A key ingredient for us is the vegan mayo. We like to use either the brands Veganaise or Just Mayo. We hope you enjoy!

Ingredients
2 cans (30 oz) garbanzo beans (3 1/2 cups)
1/4 cup onion, finely chopped
1/2 cups celery, finely chopped
2 cloves garlic, finely minced
1/4 cup dill pickle, finely chopped
3/4 cup vegan mayo
1 tsp salt
1/2 tsp black pepper
1/4 tbsp mustard

When you mash garbanzo beans the texture ends up being very similar to tuna, but with chickpeas! You can try using less vegan mayo but the flavor is definitely enhanced with it and the pickle adds that special zing!

Directions
1. In a large bowl, mash the garbanzo beans with a potato masher until desired consistency.
2. Add all other ingredients into the bowl and combine.
3. Serve on toasted bread for a delicious vegan chickpea tuna sandwich or refrigerate until ready to serve.
