Vegan Apple Cake Recipe (from juicing scraps)
By: Paul & SarahThis soft and flavorful vegan apple cake is the perfect recipe to use your apple puree/scraps that result from juicing apples. You can also use apple slices instead of a puree. We consider this our vegan apple cider cake since these are the scraps leftover from making homemade hard cider. Learn how to make hard cider at The Fermentation Adventure.

Ingredients
4 teaspoons ground flax seed
6 tablespoons water
1 1/2 cup sugar
1/2 cup unsweetened applesauce
12 cup olive oil
2 teaspoons almond extract
3 cups apple pureed (apple scraps from a juicer)
2 1/2 cup unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons water
1 1/2 cup sugar
1/2 cup unsweetened applesauce
12 cup olive oil
2 teaspoons almond extract
3 cups apple pureed (apple scraps from a juicer)
2 1/2 cup unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
The apple scraps from the juicer will be partly in chunks and partly pureed. You can use all of it in this recipe, just make sure the apples are cored to remove the seeds prior to juicing.
Directions
1. Preheat the over to 350 degrees Fahrenheit.
2. Grind flax seed and use a food processor to combine with the water.
3. In a large bowl, mix together the following ingredients: flax seed mixture, sugar, applesauce, oil, almond extract, and apple puree.
4. In a medium bowl, combine these dry ingredients: flour, baking soda, cinnamon, and salt.
5. Add the dry mixture to the wet mixture in the large bowl and mix until nearly completely mixed.
6. Add the batter to a greased mini-loaf pans and bake for 50 minutes or until golden brown. If using one large pan, bake for an additional 10 minutes.
