Spicy Cajun Boiled Peanuts Recipe

A Southern favorite - don't knock it 'til you try it! These spicy cajun boiled peanuts are a little messy but so worth it. When you boil peanuts, they become soft and take on the consistency of a bean but have an even better taste. Spicy, salty, and so flavorful!

Cook Time: 1 hour 30 minutes
Total Time: 1 hour 35 minutes

Ingredients

2 pounds of green or raw peanuts
4+ quarts water
1/3 cup salt

Optional Cajun spices:
3 tablespoons Cajun or Creole seasoning
1 tablespoon crushed red pepper flakes
2 teaspoons garlic powder
1/2 tablespoon liquid smoke
You can choose to make original salted boiled peanuts or add the Cajun spices for a spicy kick. If you want the best boiled peanuts try to find green peanuts instead of raw. Green peanuts are usually in the refrigerated section and haven't been dried out so they'll turn out softer and give you a better result for good boiled peanuts. Raw peanuts are the typical dried (not roasted) peanuts you can find in a bag on an aisle or in a bulk bin section. If raw peanuts are all you can find, you just have to cook them longer. They'll come close but will be a little tougher.

Directions

1. Sort through peanuts to remove any debris or bad peanuts. Wash the peanuts and drain.
2. Add water, salt, spices, and peanuts to pressure cooker and stir to combine. Make sure there's enough water to cover the peanuts when weighed down but not more than the maximum fill of your pressure cooker or Instant Pot.
3. Since the peanuts want to naturally float, add a strainer and a weight to weigh them below the brine. A glass Pyrex bowl or heat proof container can work well for this.
4. Cook on high for 1 hour and 30 minutes for green or 3 hours for raw. If you don't have a pressure cooker, most people make boiled peanuts by boiling them on medium low for 24 hours.
5. Give the pressure cooker time to decompress before opening and enjoying.
